Busy Day, and no time to think about dinner? This tomato soup is Italian inspired, and great on its own, or served with a toasted cheese sandwich, for a satisfying dinner without a lot of fuss.

2 large onions finely chopped
2 tablespoons extra virgin olive oil
1 teaspoon crushed garlic (optional)
2 tablespoons better batter gluten free all purpose flour
1 15 oz can tomato sauce
4 cups water (approximately)
1/2 cup uncooked white rice
Salt
Pepper
Oregano
Basil
Garlic powder
Shredded cheese to garnish

1. Heat oil in a large pot. Add onions and garlic. Sauté until soft.
2. Add flour. Create a paste (roux) with the flour and the oil/onion/garlic mixture, mixing well, so the flour doesn’t burn.
3. Pour in tomato sauce and water.
4. Bring to a boil. Add spices and rice.
5. Lower temperate to medium-low and cook covered for 20-30 minutes or until rice is soft and well cooked.
CROCK POT VERSION:

1. Heat oil in a large pot. Add onions and garlic. Saute until soft.
2. Add flour, Create a paste (roux) with the flour and the oil/onion/garlic mixture, mixing well, so the flour doesn’t burn.
3. Whisk in the tomato sauce and water.
4. Pour into crock pot, and add spices and rice.
5. Cook on low temperature for 8 hours or on high temperature for 4 hours.
