Welsh Rarebit is a traditional British dish, originating in the 18th century. Although the historical name of the dish is “Welsh Rabbit”, there is no meat in this dish. Consisting of a seasoned cheese sauce poured/spread onto toast, this hopped-up grilled cheese is comfort food at its best and an easy weeknight meal, especially during hot summer days when cooking in an oven isn’t so attractive. Our version uses Daiya or Chao for a vegan variation, but you can use pecorino romano cheese or cheddar for a more traditional version. Serve with a cold drink and some sliced tomatoes from your garden.
