It’s the month that fall begins! Are you ready? I sure am! I think I live for fall, it’s the time of year when here in Oklahoma the weather is suddenly perfect.

I will miss summer, but I also think we enjoyed it the best we could and now it’s time for a new season. Have the kids started back to school?

We are about two weeks into school now with one in kindergarten and one in 4th grade, so far, so good. It’s been a smooth transition. I think it’s been harder on me than it has on them. Something about your baby starting school just changes everything.

Suddenly I have time during the day that I once did not have. I find myself coming home and wondering what should I do today? Normally, it’s always been what should the kids and I do today…now it’s just me.

It is nice and peaceful, I feel like I suddenly have less anxiety and stress. They are both in the same place.

This month though all those extra activities start to pick up again and we will soon be adjusting our routine and settling in. That means I need some quick and easy meals too.

The Week’s Good Eats

Monday –

Start the week of with Instant Pot Vegetable Soup paired with cornbread.

Tuesday –

On Tuesday enjoy Taco Tuesday with this Tater Tot Taco Casserole.

Wednesday –

Take a break and let the slow cooker do the work with this Slow Cooker Maple Roast. Maybe even use some of that extra time and make some Buttermilk Pancakes to serve for breakfast the next day.

Thursday –

On Thursday, whip up these Maple Glazed Ribs. I’d suggest pairing them with these Air Fryer Zucchini & Yellow Squash.

Friday –

On Friday, make a delicious classic with this Gluten Free Chicken Noodle Casserole. I used Better Batter All Purpose Flour to make the noodles gluten free!
