It’s May! How can it already be May? It’s also time for a menu plan too.
May means boat season for us, plus a lot of outdoor meals. Our kids LOVE to sit out on the back patio and enjoy dinner, plus I don’t have to clean up the kitchen and dining room. That’s a nice little win for me in my opinion. We also enjoy soaking in the extra daylight and grilling outside.
I absolutely love May for a variety of reasons, one though being that for us in Oklahoma, school will soon be out and it’s our unofficial start to summer. My son will be out in just less than 2 weeks. That means I’ll soon have a 4th grader. My daughter will finish up right after him and she will be on her way to elementary school in August.
It’s time too, we are all ready for a break and for the days to just slow down a bit. Do you ever feel that way? Usually by the middle of July, I’m ready for the kids to go back to school and a consistent routine to begin, but by the time May gets here…I need a break! I just want to sleep in past 6am, is that too much to ask for? Surely not, right?
It’s here though, May is here and that means it’s time for a little bit of a slow down.
It’s also time for some delicious meals that are cooked outside.

The Week’s Good Eats
Monday-
Since it’s time for cooking outdoors, enjoy this Smoked Bologna paired with Air Fryer Gluten Free Onion Rings.
Tuesday-
On Tuesday, enjoy this Instant Pot Maple Chicken & Sweet Potatoes, then end the day with this Vegan Peach Crisp.
Wednesday-
Wednesday is the perfect day for Hearty Zucchini Lasagna. Then, make these Strawberry Crumble Muffins to serve for breakfast on Thursday.
Thursday-
It’s a good day for Sheet Pan Lemon Garlic Shrimp. Then, for a snack make some Chocolate Chip & Oat Granola.
Friday-
On Friday, grill out with Maple Glazed Grilled Salmon paired with some Grilled Okra. Finish off the evening with one of these gluten free desserts.
