Happy March! It’s best to start a new month with some new recipes so let’s get started on the week’s good eats!
I hope you all have had a wonderful year so far. I’ll admit that February was not my favorite, we were sick for the majority of the month. I almost feel like we need a redo, but I definitely don’t want to be sick again.
We are getting ready to head out on a much-needed vacation; however, I’ll still be menu planning even on vacation.
Do you plan meals out on trips? I think when you are gluten-free or have food allergies in general, there is just no way not to plan out your eating arrangements beforehand.
We typically stay in a condo or a house with a full kitchen, which is what we will be doing this time as well. It makes meals much more affordable and easier to control the ingredients as well.
So, I’ll be planning out my menu while we are on the plane and when we arrive, we plan to stop by the store and load up on groceries for our stay. I’m excited and looking forward to being near Publix. Have you shopped there?
We don’t have one where we live, but we will while we are away and I can’t wait. They have a great variety of gluten-free foods, so I know that we will have no trouble finding more than enough to eat for the week.
We’ll be heading to Disney World too and I hear they are great for gluten-free options as well. I’m counting on it because we’ll be eating in the parks for some experiences while we are there too.
All that to say, we still need a menu to get this month started. Let’s get on to the week’s good eats!
Weekly Menu Plan
Monday –
On Monday, make this amazing Gluten Free Air Fryer Chicken Fried Rice. If you don’t have an air fryer, make this Gluten Free Chicken Fried Rice.
If you do have an air fryer, I’d also suggest these Gluten-Free Air Fryer Fried Pickles.
Tuesday –
This Sheet Pan Mini Meatloaf and Vegetables is perfect for dinner. I suggest you pair it with Parkhouse Rolls from Better Batter.
Wednesday –
It’s a good day for dessert with this Peach Crumb Cobbler. Now for dinner let’s go with the Instant Pot Taco Pasta.
Thursday –
These Ham & Cheese Stuffed Popovers are fabulous for dinner or lunch today. They are made with Better Batter Gluten-Free All Purpose Flour. I’d pair them with some tasty gluten-free onion rings.
Friday –
Enjoy some comfort food Friday with this Cheesy Potato Taco Casserole.
As we head into spring be sure to save and make these Carrot Cake Cupcakes too!
