It’s summer! Maybe not ‘officially’ yet but for us it’s summer. We are just getting back from a week at the beach and adjusting to a summer schedule. It includes lots of outdoor fun and lake and pool time.

I’m still trying to figure out right along with each of you, how I will possibly get home in time to get dinner made. I figure that time will be the kids rest time so I can get dinner on the table!

Of course, menu planning is a big part of it too!

Let’s get to the menu.

Monday- Let’s start Monday with the Mexican Rice Casserole.


Tuesday- It’s a great day for Easy Tater Tot Casserole. Then, for dessert how about these ice cream sandwiches.


Wednesday- On Wednesday let’s make this Fried Squash. Then, for dinner it’s time for Tangy Turkey Meatballs.

Thursday- Let’s enjoy this Cheesy Chicken Florentine today.


Friday- On Friday, grill out with the Sweet Honey BBQ Ribs!
