Happy June! It’s finally the month that summer officially starts, are you ready for summer? We’ve already been on our summer break for a few weeks now and are starting to get into the groove of juggling kids with work. It’s a little bit of an adjustment those first few weeks being home so much more for the kids and without as much structure. I’ve started to plan out activities during the day so then they can rest a bit while I work in the afternoon. It’s starting to become a consistent routine, which is nice!

Do you have vacation and summer plans? We basically spend most of our summer at the lake but also have a vacation coming up to travel to Upper Michigan. I’m anxious to get away for a bit! It’s always nice to change up the routine. Sometimes, I wish we could travel most of the summer…maybe someday. Of course, then I’d probably be anxious to be home too.

Monday-

Start the week with a tasty bowl of Slow Cooker Summer Vegetable Soup. I love to pair this with a gluten-free bread option.

Tuesday-

Make a simple recipe with this Slow Cooker Apricot Chicken. I love to pair it with some Grilled Potatoes & Beans!

Wednesday-

A tasty favorite for us is this Mexican Meatloaf, you can easily use a gluten-free cream soup or make your own too!

Thursday-

This Spinach Artichoke Chicken is a delicious dish, then for dessert celebrate the summer with this American Flag Cookie Cake.

Friday-

On Friday, grill out these Grilled Baby Back Ribs plus for dessert enjoy this Peach Crumb Cobbler.
