How did your 4th of July go? We ended up going camping and staying at the lake for several days and it was just what I needed. It was so nice to just slow down a bit and enjoy the fresh air. The good thing is that it seems like when we camp everything we eat ends up being naturally gluten-free so it makes it easy on me eating wise as well. Do you have anything you make sure to pack with you when you go camping that is gluten-free? I did take some trail mix, bread, and bars with me just so I had a stockpile if needed.

We are actually just about a month away from going back to school. It is that time of summer when I’m starting to get ready for that routine again, I crave it. I’m also anxious to get started this year as my daughter will be starting Pre-K. That means that it will be her first year in elementary school and my first year with both kids at school all day. What does that mean for me? I am actually going to be working normal working hours and not as much at night, which is just amazing! I can’t wait for that! It’ll be so nice to really be able to shutdown in the evenings and focus on the family 100%.

Thursday – Start the day with Strawberry Crumble Muffins. Make it a light dinner with this Lemon Garlic Salmon.

Friday – Now this is a good day for Summer Squash Pizza.
