Happy February!

Here in Oklahoma, this is our last real full month of winter. I’m thrilled, I’m sure that’s not the case for everyone though. I’m definitely ready for spring. If we could just get some snow with this cold weather, I’d love just a little…please? Then, I would be happy to move on to spring.

We love the outdoors, so warmer weather would be much appreciated and my daughter is just dying to wear some flip flops again. She’s certainly a warm weather girl, she lives for the outdoors and summer. She’s been asking when she can go swimming for months, it’s getting closer.

In the meantime though, we are still enjoying lots of soup and chili. Are you? I’ve also started to use my Air Fryer much more this past month. I’ve discovered that I can use it for so many delicious foods. I’ll be sharing more of those on next month’s menu plan because of course they are all gluten-free too.

Let’s get to this menu plan!

Monday-

Make Monday a simple day with this Instant Pot Meatball Soup and pair it with Homemade Cornbread.

Tuesday-

These Sweet Potato Kale & Rice Bowls have quickly become one of my favorites for lunch and dinner! Let’s do dessert tonight with these Heart Shaped Sugar Cookies.

Wednesday-

Enjoy this Easy Taco Salad on Wednesday. It’s delicious and better-for-you too! Then, save these Cranberry Pancakes to make for breakfast the next morning.

Thursday-

Warm up with a bowl of Slow Cooker Chili Beef Stew, we like to serve this with some corn chips and cheese.

Friday-

Comfort food at it’s best with this 15 Minute Stovetop Mac & Cheese tonight!
