Happy August! Our summer is wrapping up as we prepare to head back to school. Our kids go back the middle of the month and let’s face it, I’m ready. It’s been a fun summer but as a work at home mom, I’m looking forward to getting my evenings back. Right now, that tends to be my prime work time. I did enjoy them being home though all summer and soaking up the sun!
In the meantime though, let’s get on to a menu for the week.
Monday-
Let’s start the week with these Chicken & Rice Cabbage Wraps. These wraps are a great mix of Chicken Fried Rice and cabbage.
Tuesday-
On Tuesday, enjoy this Strawberry Salsa Chicken. Then, for dessert enjoy this Peach Crumb Cobbler. This cobbler can actually be done with any fruit you may have on hand too, the perfect way to customize it.
Wednesday-
Now, let’s talk about Wednesday, today it’s time for Mexican Meatloaf.
Thursday- Let’s have breakfast for dinner with Buttermilk Pancakes with Blueberry Sauce tonight.
Friday- Friday enjoy Eggplant Parmigiana and a delicious pizza for dinner.
This sounds like a delicious week of good eats to me. How about you? What’s on your menu. I have to say that Eggplant Parmigiana is by far my favorite. It’s one of those meals I could eat everyday and I love that it’s so simple to make gluten free with Better Batter All Purpose Flour.
