Happy March! Can you believe it’s March? I know that I’m still a little shocked but I’m also glad. I’m ready for spring, well really I’m ready for summer. It’s time though for The Week’s Good Eats.

Here in Oklahoma, spring means tornadoes. That means we will soon be cleaning out our shelter. Of course, last August, we really got to use that shelter and we normally don’t have tornadoes in August. We barely woke up too, it was in the middle of the night and I randomly woke up to the sirens going off. Then, our house alarm siren went off. That was a crazy way to wake up, especially not expecting a storm at all!

We went running for the kids, we literally tossed everything that was around our shelter all over the place and got in there. I’ll admit I was a nervous wreck because I kept thinking about if there were snakes in there. AH! We hadn’t used it in a few months, so there was no telling. Then, suddenly, it sounded like a freight train was running us over. That was it…a tornado went right over our house. It was the tail end of it and I still get chills just thinking about it.

Our neighbors windows were blown out, trees were down everywhere, a huge tree in our yard fell into the back of my husband’s truck. Then, we lost some of our shingles but we were all okay. That’s the only thing that matters right?

That is why I’m perfectly fine skipping spring; however, that was actually in the summer and completely not normal even for our area!

Now, that is a crazy story to lead into the menu plan, but that’s where we are right now.

Tuesday-

Easy Taco Salad will be the perfect quick dinner.

Wednesday-

Air Fryer Honey Garlic Chicken is absolutely amazing. Then, let’s do a Blueberry Crisp for dinner!

Thursday-

Instant Pot Vegetable Soup is a fabulous simple choice. Let’s pair this one with cornbread.

Friday-

15 Minute Mac & Cheese is a great option for dinner. Be sure to have some Hot Chocolate Brownies for dessert.
