It’s a new year and that means more good gluten free eats, right? How is your year starting so far? I’m trying to adjust back to our routine, but it’s also a bit busier for us because of basketball season. Sometime mid-February is when life slows down for us and I feel like we can breathe a bit more post holidays and basketball season too.

This upcoming few months each night is so busy that I’m just hoping to get dinner on the table. Do you ever have that problem? We always seem to but it’s normally just a few days and not every single day of the week. I’m such a homebody that I’m on the fence whether or not I’m looking forward to being so busy or not. I sometimes need my time at home, do you?

In the meantime let’s get a menu planned out!

Monday-

Start the week with Gluten-Free Slow Cooker Tangy Turkey Meatballs. These are perfect paired with Baked Onion Rings too.

Tuesday-

Enjoy one of our favorites, Chicken Spaghetti Bake. This is made with spaghetti squash making it a better for you option too!

Wednesday-

It’s time for a kid-friendly dinner with these Corn Dog Muffins, pair them with your favorite veggies!

Thursday-

Warm up with this Slow Cooker Chili Beef Stew. Then, be sure to pair it with Homemade Cornbread.

Friday-

Make today an Instant Pot Teriyaki Chicken day. This is such a great dinner and it cooks itself in minutes! Then, celebrate the end of the week with Gluten-Free Blueberry Crisp!
