Breakfast (any time of the day) is one of my family’s favorite meals. I have tried to be a little creative with our “breakfasts” because the same old pancakes can be rather boring. My latest idea was to make breakfast sandwiches using waffles. They are quite tasty, even if I do say so myself! Enjoy, and be blessed!
Waffle Breakfast Sandwiches
Ingredients:
Better Batter Gluten-free Pancake and Biscuit Mix
Milk (or substitute)
Eggs (or substitute)
Breakfast meat (sausage, bacon, ham, etc.)
Cheese slices (I like to use cheddar.)
Instructions:
1. Make waffles according to the instructions on the Better Batter Gluten-free Pancake and Biscuit Mix. (If you tend to be a little scatter-brained like me and have run out of Better Batter Gluten-free Pancake and Biscuit Mix, you can use a recipe like this one at http://allrecipes.com/recipe/waffles-i/ and substitute Better Batter Gluten-free Flour. I did add an extra egg to this recipe and beat the eggs in my stand mixer while gathering the other ingredients. The fluffy eggs made the waffles light and fluffy.)
2. Cook your choice of breakfast meat. I like thin-sliced ham or bacon.
3. Cook your choice of egg for your sandwich. I like fried egg with the yolk broken and cooked through. My kids like scrambled eggs.
4. Assemble your sandwich. I butter my waffles, then layer ham and egg with cheese on top.
5. Enjoy your yummy “breakfast!”
