This cake is a cinch to make – requiring only TWO ingredients! The flavor and texture are similar to pineapple upside down cake, and you don’t have to worry about watching it. Make this on a busy day, and enjoy warm and delicious dessert that evening.

1 box Better Batter Gluten Free Yellow Cake Mix

1 15oz can Fruit Cocktail in heavy syrup

Equipment: 1 8-quart round crock pot; 1 bundt pan


Remove the crock pot liner from the slow cooker. Spray bundt pan with non stick spray, or grease well. In a bowl, combine yellow cake mix and fruit cocktail – mixture will be thick at first and will turn into a batter as you continue to stir it. Spoon into greased bundt pan. Place bundt pan into the empty slow cooker and place the lid on top. Cook on low heat for 4 hours or on high heat for 2 hours, venting the lid with a wooden chopstick or spoon the last 30 minutes or once the top of the cake is solid and springs back when pressed lightly with the hand.

Remove cake from the slow cooker and unmold onto a serving platter. allow to cool for a few minutes before serving.
