Just in time for Memorial Day weekend, show your patriotic side and bake this fun dessert! Triple Berry Brownie highlights a layered brownie with delicious cream cheese filling and is topped off with perfectly ripe fruit. Because fruit on top of any dessert makes it healthy, right?
1 box Better Batter Gluten Free Fudge Brownie Mix (oil, eggs, and water as called for in the package instructions)
1 (8oz) regular or 1/3 less-fat cream cheese, softened
1/2 cup Better Batter Corn Free Powdered Sugar
1 tsp. vanilla
1 cup frozen whipped topping, thawed
1 1/3 cup sliced fresh strawberries
1 cup fresh blueberries
1/2 cup fresh raspberries
Heat oven to 350 degrees. Spray the bottom of a 12-in pizza pan with cooking spray. Prepare brownies as directed on Better Batter box and spread in pan. Bake 20-25 minutes or until toothpick inserted two inches from side comes out clean. Cool completely. In a medium bowl, beat cream cheese, powdered sugar, and vanilla until smooth and creamy, about one minute. Fold in whipped topping; spread evenly on top of brownie layer. Arrange berries over cream cheese layer. Refrigerate at least one hour to firm. Store covered in the refrigerator.
