It may seem strange to some to be talking about camping after summer break has come to an end. However, depending on your climate, late summer or early fall camping trips can be some of the most pleasant and memorable. Because most families would need to hit the woods for only a few days, it is imperative to plan ahead with dietary restrictions in mind to allow for smooth sailing through the weekend. This meal plan is designed for Labor Day weekend, but the recipes can certainly be used anytime! FRIDAY Once the gang is unpacked, fire up the grill (or grate over the fire) for these Churrasco Burgers with Grilled Balsamic Zucchini. Make the Chimichurri Sauce and hamburger buns before your trip, of course!

Vegan or Dairy Free? You can swap the burgers for portobello mushrooms (use the same seasonings) or your favorite veggie burger, and use the same seasonings and marinade. Omit the Cheese or use a dairy free cheese instead

SATURDAY Saturday Lunch: This next dish is a masterpiece… Foil Packet Salmon with fresh sliced veggies and Glazed Lemon Zucchini Bread.

Vegan or Dairy Free? You can swap the salmon with for a mixture of cubed eggplant, portobello mushrooms, and zucchini (use the same seasonings) . Use dairy free milk and a tbsp of vinegar in the zucchini bread.

Saturday Supper: This evening meal can be made in one pot all day while you are at play… Check out this Chicken Stew recipe, along with some other great GF camping tips!

Vegan? Omit the chicken and add a couple extra cans of beans or a couple extra cups of edamame.

SUNDAY Sunday Lunch: Welsh Rarebit or Rabbit with a side of Grilled Asparagus Salad made with parmesan cheese alternative and seed of choice in place of slivered almonds as needed.

Sunday Supper: Now for a new family favorite… Barbarian Beef and Grilled Radishes with our Jiffy Cornbread Clone.

Vegan? I find the Barbarian beef recipe works with eggplant - just make sure to choose a firm one and to peel it and salt it thoroughly. Texture will be way different, but the taste is good. Serve with beans and a starch for a complete protein.
