Get ready for a new month with the week's good eats and this great menu plan!

It's finally October and the weather is going to start changing soon, I'm so ready for that too. I always seem to be ready for the next season, we have had such a hot summer...I'm more than ready! I've been experimenting lately with some new recipes using Better Batter and I have to say I've found a new favorite that I'm excited to share this month Gluten-Free Pumpkin Bread. I actually made this pumpkin bread in my Ninja Foodi, but it's easy to make in the oven too, so those instructions are noted on the recipe card. The taste reminded me of Starbuck's Pumpkin Bread, I used to enjoy that many years ago before changing to a gluten-free diet. This pumpkin bread just brought back all of those great flavors that I have missed! This recipe works perfectly with Better Batter Gluten-Free All-Purpose Flour. I'm ready for fall foods too, so this menu will be full of some fall comfort foods. Do you have any favorites?

Week of Good Eats

Monday - Start the week with Pumpkin Chocolate Chip Waffles for breakfast, these are sure to be a treat. Then, for dinner enjoy this Gluten-Free Chicken Noodle Casserole with homemade egg noodles. Tuesday - Enjoy this tasty Enchilada Casserole on Tuesday, it's perfect! It's also a great day for that Gluten-Free Pumpkin Bread too! Wednesday - On Wednesday, warm up with a pot of Instant Pot or Pressure Cooker Pumpkin Chili paired with Homemade Cornbread. Thursday - This Loaded Potato Soup is a treat with Gluten-Free Cheddar Bay Biscuits. Friday - Friday is the best night for a Deep Dish Pizza and some Pumpkin Pie Cupcakes too. This sounds like a great start to the month of October with delicious recipes to get your month started.
