Each blogger will be hosting a category. This week Better Batter is hosting Breakfast, and boy are we excited to bring you Just-Add-Water Easy Biscuits and Gravy.
This week I was challenged to Cook Breakfast. Breakfast on the open fire is relatively easy – you’ve got your basic eggs, bacon, sausage, and pancakes, which can all be done with a hot griddle, a little grease, and some careful attention. I thought to myself, how can I really make something that is fast, convenient, and super easy to take in situations where a big cooler full of ice isn’t really possible – like backpacking through the Appalachians or if the end of the world happens and all the hoarders buy the ice before I get there….
It occured to me that our Better Batter Gluten Free Pancake and Biscuit Mix only requires the addition of water… and that led to me wondering if I could make an ‘instant’ sausage gravy that could be packed along for camping. Precooked, dehydrated, and ready to be reconsituted with boiling water or hot coffee, if I could get this right, I could offer something truly easy. Because – let’s face it, it does happen from time to time – after a cold night’s sleep on a deflated air mattress, you really don’t want to worry about food poisoning from improperly stored milk and sausage.
I am so happy to report my little experiment went really well, and now – with a little before camp preparation – you can make fail free biscuits and gravy.
Equipment

- Mixing bowl
- “Rolling” surface
- Whisk
- Biscuit cutter or tuna can etc
- Serving Spoons
- Skillet or pan
- Disposable pie plates (at least 2 – each 2 pans will make 8 2″biscuits)
- Foil
- Oil or Pam for High Heat
Ingredients:
1 Recipe Instant Sausage Gravy Mix
1 Box Better Batter Gluten Free Pancake and Biscuit Mix
Water
Instructions:
First Light the Fire!
Heat your fire so that you have hot coals – you want the fire to be hot enough that you can only hold your hand over the coals for about 10 seconds. This will give you roughly a 400 degree oven temperature. I found it took 20-30 minutes to get this with a wood fire. A coal or gas fire may take as little as 15 minutes.
While the fire is heating, Make the Biscuits
In your mixing bowl, combine 2 cups of Better Batter Gluten Free Pancake and Biscuit Mix and 1 cup water for each pie pan you plan to make – each pie pan will make 8 small (2″ round x 1″ high) biscuits – enough for one hungry person in our family. Adjust accordingly. You will note that as you mix, the batter will thicken until it is easy to pat out into biscuits that can be cut.
Pat Biscuits out to 1 inch thickness and cut with a biscuit cutter or other round cutter – you should get 8 biscuits per 2 c mix and 1 c water. Grease or spray a disposable pie pan and place the cut biscuits into the pan – about 8 should fit comfortably. Spray the tops of the biscuits with more oil or cooking spray and spray your second pan. Place the second pan on top of the first pan to create a mini ‘box oven’ and seal the edges with foil. Repeat as necessary.
Place on your fire grate and cook for the first of two ten minute sets – no peeking!! After 10 minutes flip the biscuit pan and cook another 10 minutes. You may peek during the last 5 minutes of cooking, if you think they’re getting too cooked.
While Biscuits begin to cook, Make your sausage gravy
In your skillet or pan, for each serving combine 1/2 cup of Instant Sausage Gravy with 1 cup of water or coffee – this amount isn’t enough for even one hungry person in our family, so if you’re like us. adjust accordingly. The mix will look really funky and curdled at first, but as it cooks, it will thicken and bubble beautifully. If you are using boiling water or coffee, this will take about 10 minutes to fully rehydrate and cook. If you are using cold or room temperature water it will take 20 minutes. Adjust your timing so that your biscuits and gravy end up cooked at the same time :-). You can always speed this way up with really hot fire or really boiling water, and use already cooked biscuits. It should still take no less than 5 minutes, however to get thick and creamy.
Check your biscuits…
At this point you should be at 20 minutes cooking time, and your biscuits should be fully cooked. Go ahead and remove the cooked items from the fire, uncover, and serve!!
