These ridiculously moist and flavourful muffins are absolutely the best muffins in the world and abnormally easy to make, if you keep a box of Yellow Cake mix or our recipe for Boxed Cake Mix on hand. Frozen blueberries work just as well as fresh and ensure that you can whip these up whenever the mood strikes. This recipe makes 8 jumbo (Texas sized) muffins. Feel free to make smaller muffins, but adjust the cooking time accordingly.
3 eggs, beaten
2/3 c milk
1/3 c oil
1 tsp baking powder
8 oz blueberries
Mix all the ingredients, except the blueberries, together. Stir in the blueberries and spoon into lined, texas-sized muffin cups.
Bake at 375 for about 20 minutes or until the tops barely begin to brown. Please note these will only be very lightly browned — pale!
