Use this batter any time you want to deep fry a ‘sweet fair food’ – with three or four ingredients, it’s easy to put together. Feel free to scale up the recipe for large batch frying, but note it will thicken on standing.
1/4 c extra fine sugar (NOT confectioner’s sugar!)
2 c milk or water
2 eggs (optional)
Place Better Batter Gluten Free Pancake and Biscuit mix in a medium to large mixing bowl. In a separate bowl, whisk together sugar, water, and optional eggs, until the sugar dissolves completely, about 3 minutes. Pour into pancake mix and whisk quickly to combine until smooth. Use immediately.
