Sweet corn casserole is a staple food at many church potluck dinners. Being from a Southern Baptist background I have been to my fair share of church dinners! For this Sunday’s fellowship potluck dinner, I decided to try my hand at making a gluten-free corn casserole. It was quite tasty–even if I do say so myself! You could easily add to the recipe to take this from side dish to main dish by adding a layer of chicken underneath. You could spice it up by adding diced chilis to the mix or even add some cheese to the top.
