These waffles are delicious with or without the heart shaped griddle – strawberry puree lowers the fat content of the waffle and adds a punch of flavor. For extra love, serve with fresh strawberries and powdered sugar or real whipped cream.

2 c Better Batter gluten free pancake and biscuit mix

1 c milk or water

2 eggs

1 lb strawberries, divided

Preheat waffle iron until smoking hot, and grease very well.

In a bowl place better batter pancake mix.

In a separate bowl beat together eggs and milk or water. Pour into a blender with 8 ounces of strawberries. Blend until smooth and combined. This should make about 3 c of liquid – add a few more strawberries and blend again, if necessary until you get about 3 c of liquid.

Add liquid to pancake mix in bowl and stir lightly to just combine. Do not overmix, as this will thicken on standing.

Pour into waffle maker in batches and cook as directed for your iron, or until golden brown.

Serve immediately with strawberries and powdered sugar or whipped cream.
