strawberryspongecake-1.jpgThis recipe drew its inspiration from a very popular cake made in one of our local Pennsylvania grovery stores. Gelatin gives this cake a tang and adds moisture – feel free to use a commercial, flavored vegan gel if you prefer – and a rich glaze adds a fine counterbalance of sweetness. Because it is so rich, this cake will serve many people.

Cake Mix Ingredients

1 recipe Boxed Cake Mix

2 sm. pkgs. strawberry gelatin

1 c. oil

4 eggs

1/4 c. water or berry juices (from thawed berries)

3/4 or 1/2 box (10 oz.) frozen strawberries, thawed & drained

Glaze Ingredients

1/2 stick butter

2 c. powdered sugar

Juice from drained strawberries


Preheat oven to 350 degrees and grease a bundt pan or sponge cake pan.

In the bowl of your mixer, combine the cake ingredients until smooth.

Bake for about 45 minutes or until golden brown. A cake tester inserted into the center should come out clean.

Allow to cool for ten minutes in the pan and then carefully unmold onto a cake rack or plate.

Mix together glaze ingredients. Stick holes into warm cake with a long, thin skewer and pour half of glaze onto cake .

Allow cake to cool completely. Carefully drizzle remaining glaze over the top of the cake and let set before serving.
