Po Boys are a unique sandwich from New Orleans and are wonderful to eat…. for those of us who can’t do gluten, we can still make them at home, using our Better Batter products! This version contains shrimp, lettuce, tomato and our secret Cajun sauce on a Leidenheimer bread copycat. Your mouth will do a happy dance. This recipe serves 1, and may be scaled up to feed more people.
1 6 inch length of roll from our Leidenheimer clone recipe
10 jumbo shrimp, raw, peeled, and deveined.
2 eggs, beaten
1 c Better Batter Gluten Free Seasoned Flour
Shredded Lettuce
Sliced Tomato
1/4 c Cajun Mayo (recipe follows)
Prepare Leidenheimer roll, slice down middle and set aside.
Dip shrimp in eggs and coat in seasoned flour. Allow to sit in flour for at least 10 minutes, to create a good crust.
Heat oil in a heavy pan or fryer ever medium high heat to 350 degrees. Shake excess flour off shrimp and fry for 2-3 minutes, or until golden brown and floating.
Smear cajun mayo on both sides of roll. Top with shrimp, tomato, and lettuce and serve immediately.
Cajun Mayo
Note: you can use dairy free or egg free versions of the ingredients below with no problems!
1/2 c mayonnaise
1/2 c sour cream
1/4 c +/- Frank’s Red Hot sauce
1-2 tsp paprika
Blend all ingredients together, seasoning to taste with the Red Hot and paprika. Serve immediately, or refrigerate for later use.
