Because this week’s theme is open for interpretation and intended for use by all, I decided to include satiating dishes that will just make you feel brand new! I also could not pass up the opportunity to showcase a delicious and adorable Easter-themed dessert that you will want to savor through the weekend… *suspense* Monday Let’s kick off the week with a dish I have affectionately nick-named Spring Chicken: Pan-Seared Chicken Breasts with a Roasted Vegetable Medley.
Tips from Tori Vegetarian? Swap out the chicken breast for firm tofu, roasted jackfruit, or even white beans and use vegetable broth in place of the chicken broth - the lemon sauce is honestly good on anything! Green jackfruit or oyster mushrooms work well here, but make sure to supplement your meal with a protein shake (like a pina colada protein smoothie, for instance) Allergic to Shellfish?: You can easily swap this for Chicken or Beef - it's great! Wednesday Nothing can give you a mid-week boost like this all-in-one meal: Broccoli Quiche with Mashed Potato Crust. Celebrate the simplicity of this quiche with a Hasselback Pear Tart with the puff pastry recipe from Here. Nothing like some cheese-like goodness to get you through hump-day. Try our Vegan Mac-n-Cheese with steamed broccoli as a delicious side dish or mix-in! Tips from Tori Dairy Free? In the quiche: swap the cheese for Daiya, Follow Your Heart, or any other good df cheese, swap the milk for a df sub. In the tart: swap out the dairy ingredients for their dairy free counterparts (So Delicious, Daiya or Tofutti for cream cheese) and follow the dairy free recommendations for the puff pastry Egg Free? Quiche: Omit the eggs in the recipe, and use a blended up can of white beans or garbanzo beans instead - if you really want an eggy taste, add a sprinkle of black salt. Pump it Up: If you wish you can add 2 c of ham, bacon, etc to the quiche for flavor, or use a pound of it, mixed into the mac and cheese and make it a meal on its own! Thursday

This next classic will hit the spot! Meatball Subs with Greek Salad is a balanced meal that the whole family can enjoy. I prefer to use Kalamata olives for the salad for both color and flavor. Tips from Tori Dairy Free? Swap out the feta in the salad for white beans - so good! Omit the cheese in the meatballs Vegan? Ditch the meatball subs and use several cans of white beans in the Greek Salad - toss with the dressing before adding to the salad for the best flavor. Friday
