Vegetarian? Swap out the chicken breast for firm tofu, roasted jackfruit, or even white beans and use vegetable broth in place of the chicken broth - the lemon sauce is honestly good on anything!

Dairy Free? In the quiche: swap the cheese for Daiya, Follow Your Heart, or any other good df cheese, swap the milk for a df sub. In the tart: swap out the dairy ingredients for their dairy free counterparts (So Delicious, Daiya or Tofutti for cream cheese) and follow the dairy free recommendations for the puff pastry
Egg Free? Quiche: Omit the eggs in the recipe, and use a blended up can of white beans or garbanzo beans instead - if you really want an eggy taste, add a sprinkle of black salt.
Pump it Up: If you wish you can add 2 c of ham, bacon, etc to the quiche for flavor, or use a pound of it, mixed into the mac and cheese and make it a meal on its own!

Greek Salad is a balanced meal that the whole family can enjoy. I prefer to use Kalamata olives for the salad for both color and flavor.

Dairy Free? Swap out the feta in the salad for white beans - so good! Omit the cheese in the meatballs
Vegan? Ditch the meatball subs and use several cans of white beans in the Greek Salad - toss with the dressing before adding to the salad for the best flavor.

springtime alfredo instead!
