Bars:
4 eggs
2 c sugar
1 c oil
2 c (8oz or 227g) Better Batter Gluten Free Flour
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
2 c pumpkin (15 oz can)
Beat eggs. Add sugar & oil – mix. Add dry ingredients – mix. Add pumpkin – mix.
Bake in large ungreased cookie sheet @ 350 degrees for 20 – 25 minutes.
Let cool thoroughly, then frost.
Frosting:
4 ½ oz cream cheese (softened)
¾ c butter (softened)
3 c powdered sugar
1 ½ tsp vanilla
Cream cheese & margarine together. Add powdered sugar and vanilla and mix.
