3 large potatoes, cut up (peeling is optional)
1 cup water
1 small onion, finely chopped
1 Tbsp. GF chicken bouillon
3 cups 2% milk
3 Tbsp. margarine
2 Tbsp. snipped parsley
2 Tbsp. BB flour
salt and pepper to taste
1 cup cheddar cheese, shredded

Note: I make this in the microwave, but it can be made in a large pot on the stove.

In 3 quart casserole, combine potatoes, water, onion, and chicken bouillon.
Cover and microwave 15-20 minutes or until potatoes are tender, stirring every 5 minutes.
Mash with potato masher.
In a 1 cup glass measuring cup or small casserole dish, melt margarine in microwave. Stir in flour, salt, and pepper.
Add to potatoes and stir well.
Add milk.
Microwave at medium or 50% power until thickened and bubbly, stirring every 3-4 minutes.
Add parsley and cheese just before serving.
