Monday

Like a warm hug, we welcome this steamy comfort food classic with a veggie-twist! Try a bowl of chicken zoodle soup with our famous Parker House rolls for dipping.

Vegan? Swap the chicken broth for veggie broth and add cubed tofu or beans!

Tuesday

Turn up the heat with this quinoa and black bean chili. Pair with our vegan Yankee-style creamed cornbread for a meatless creation that will satisfy the whole family.

Corn Free?This chili is hearty enough without it, but if you’re craving just a bit of starchiness, use black eyed peas instead of corn.
Level Up: Use dairy free sour cream and a sprinkle of dairy free cheese if you like to add comforting creaminess to the meal. Make sure to serve with a refreshing beverage, like limeade!

Wednesday

For the mid-week stretch, we have a meal that is both pretty in pink and heart healthy! This baked dijon salmon can be made using our seasoned bread crumbs or 4C gluten free brand. This meal is complete with roasted asparagus and mushrooms.

Thursday

The recipe for self-love involves something light and simple, paired with a sweet treat. Try this balsamic roasted beet salad with our plain croutons. Finish off Friday night with these valentine’s cake mix cookies!

Vegan? Use hempseed in place of the feta – for an extra kick and creamy texture, soak it in a bit of white balsamic vinegar for about 15 minutes (just enough to dampen).

Friday

Growing up, Valentine’s Day always warranted a special meal. My mother made sure to include our favorite “fancy” dishes and we all felt the love. With her in mind, this seared filet mignon is the perfect entrée to add to your repertoire. Pair with roasted cauliflower in cheese sauce and easy garlic green beans for a perfectly balanced plate. For the grand finale, whip up some decadent raspberry chocolate cups.
