Why pay big bucks and risk getting sick when you can make a delicious shamrock milkshake right in your very own home? There are a lot of clones out there – my memory of the Shamrock shake involves a minty/vanilla flavor and a thick creamy texture. I found that the secret to getting the texture and taste of the Shamrock shake is to add a small amount of our yellow cake mix to the shake and to use spearmint rather than regular mint or peppermint extract. This ice cold, refreshing beverage can be whipped up quickly and can be made allergen free very easily. Try it just in time for St. Patrick’s Day or enjoy it all year long! This recipe makes 2 very large shakes.
3 c favorite vanilla commercial ice cream (we like So Delicious Dairy free) or 3c of frozen recipe Frozen Custard
1 1/2 – 2 c milk or df milk substitute, or more to suit desired thin/thick texture of shake
1/2 c (2-3 oz) dry Better Batter Yellow Cake Mix
1/4 tsp spearmint extract
a few drops green food coloring, optional
whipped cream and maraschino cherries, optional
Blend all ingredients in blender until smooth and creamy. Serve in a large cup, with a big straw and top with whipped cream and a cherry, if desired.
