I love a good Cake Mix Hack! This terrific recipe from Libby Weiss is where we take the convenience of a cake mix and elevate it into something more special. It definitely wont look like something baked from a box, and it’ll be our little secret.

3/4 Cup Better Batter Gluten Free Flour
3/4 Cup Brown Sugar
1 1/4 teaspoons cinnamon
1/4 teaspoon Salt
4 tablespoons oil.
1/2 cup chopped pecans

1 Better Batter Yellow Cake Mix, prepared according to box directions BUT adding:
ADD 1 extra Egg
ADD 1 tablespoon lemon zest
Substitute Orange Juice for the water.
1 1/4 cups blueberries mixed with 1 tsp Better Batter flour

Line a 9×13 pan with parchment paper. Preheat the oven to 350 degrees.

Combine ingredients for the crumb in a large bowl. Mix together either using your fingers or a fork until coarse crumbs appear. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment, prepare the cake. Pour the mix into the bowl and add the ingredients indicated on the box BUT substitute the water with orange juice and add one extra egg and lemon zest. Once the batter is prepared, fold in the blueberries.

Place 1/3 of the crumb on the bottom of the prepared pan. Pour the batter on top. Pour remaining crumb on top of batter.

Bake in preheated oven for 45 minutes or until a tester comes out clean.
