This trifle is a cinch to whip together thanks to our five minute microwave angel food cake, and commercial lemon curd and whipped topping. We used slightly softened frozen cranberries from our food storage for this recipe, but you can add any fresh berry, for a fabulous contrast in taste and texture. If you have a little more time, or need to make a non dairy lemon curd, you may want to try your hand at making homemade lemon curd. We tried this with Earth Balance buttery substitute and it was fabulous.
1 recipe Five Minute Angel Food Cake, cooked, cooled, and torn into one inch pieces
1 jar commercial lemon curd or one recipe lemon curd, homemade, about 1-2 cups
1 pint whipping cream or non dairy whipping topping (we use Rich Whip)
1 quart fresh berries (you can use any berry. We sauteed frozen cranberries until just barely softened), cleaned
Divide all ingredients into thirds.
In a large glass bowl, layer ingredients as follows: angel food cake, lemon curd, whipped topping, berries; use one third of the ingredients in each layer and repeat layers two more times. Top with remaining or additional berries as desired.
Refrigerate at least 30 minutes to allow flavors to meld. Serve cold.
