Gluten Free Harvest Breakfast Hash, Inspired by Candy Corn as part of our KO the Candyman Blogger event. Why not make a special breakfast this harvest season – a yummy hash filled with good for you sweeties – sweet potato, sweet yam, and cubed beef (you can use corned beef or other meat) or sweet blue potatoes (they’re really purple!). Serve with an egg and a side of toast for a really fantastic and filling start to your day. This recipe feeds four generously as a meal (with eggs and toast) but can easily be scaled down to suit your appetite and family size.

1 pound yellow yams, yucca or white potatoes, diced into 1/2 inch dice
1 pound orange sweet potatoes, diced into 1/2 inch dice
1 pound purple (incan) potatoes, optional, diced into 1/2 inch dice
1 pound bacon or beef (you may use any cooked, cold beef such as corned beef or leftover roast, or you may omit), or both! – optional, diced into 1/2 inch dice
1 large sweet onion, optional, diced into 1/2 inch dice
1/4 c (about .75 oz or 28g) Better Batter Gluten Free Flour or seasoned flour
1 tsp to 1 tbsp each pepper, salt, and paprika, or to taste

If you are not using bacon, add 1/4 c high heat appropriate oil, shortening, lard, or other solid fat

If you haven’t already, dice everything into 1/2 inch dice! Setting the food up like candy corn is optional, but fun for the kids and very helpful in getting them to try the food, if you’re so inclined.

Place everything except additional fat in a large bowl, tossing with Better Batter flour and seasonings to coat. Allow to sit at least 10 minutes while your skillet heats.

In a VERY large, very heavy skillet, either fry the bacon on medium heat until the fat renders OR heat the oil/fat until sizzling.

Place everything from the bowl into the pan and toss as quickly as possible in order to coat the ingredients with a fine film of oil/fat. Continue to toss about 5 minutes, or until vegetables start to soften.

Lightly pack into the pan and allow to cook another 5 minutes or so, until a crust forms on the bottom – watch carefully as this can go from toasty to burned quickly! Give everything one more good toss and repack. Allow to cook another 2-3 minutes, allowing a crust to form again.

Cook any desired sides (such as eggs or toast) while the hash is finishing.

Plate up and serve immediately with desired sides.
