This simple, tasty soup was inspired by the Hunger Games and is a thrifty way to use up whatever you may have on hand in the fridge and pantry. This recipe makes a lot (enough for a crowd), so feel free to reduce it, if you wish. For a Hunger Games Experience, serve with District Twelve Biscuits.
1 pound each of three types of meat (we recommend chicken or game bird, beef or lamb, and venison), diced, or ground small
2 Tbsp Better Batter Gluten Free Seasoned Flour
1 Tbsp oil or butter
Three (15oz) cans gluten free beef broth or homemade version (may add more to ‘stretch’ the meal)
3 pounds frozen mixed vegetables, or three pounds of chopped mixed vegetables from your veggie drawer and cupboard.
Three (15oz) cans diced tomatoes
3 onions chopped fine
2 potatoes diced fine
1 1/2 tsp salt
1/2 tsp pepper
parsley, thyme, and sage to taste (dried or chopped), about 1 tsp total
Blend together chopped or ground meat and Better Batter Seasoned Flour, until well coated. In a large, heavy bottomed pan, heat the oill. Add the meat and brown well.
Add remaining ingredients and cook on low heat at least an hour – this may simmer all day in a slow cooker!
Serve with District 12 Biscuits, if desired.
