Ranking as the fourth most popular Girl Scout Cookies, Do Si Dos are a long time fan favorite combination of crispy oat cookie and a peanut butter filling base. For our family, with multiple allergies (peanut, dairy, and gluten), there is no way to enjoy this delicious little cookie without making it ourselves. While there are a number of clones out there, I wanted something easy to put together for those of us trying to do multiple flavors at one time, so I tweaked my Old Faithful Girl Scout Shortbread Dough recipe slightly, and used the same filling as for my Tagalong recipe – the result was pretty darn tasty, and easy to do. This recipe is scaled to make about 44 Do Si Dos, or roughly 2 and a half boxes worth.
