When I traveled to France, I ate a LOT of galettes because that was the only thing I recognized on the menus that I knew was gluten-free. I wanted to try making them at home, so I found a recipe and gave it a whirl. The galettes turned out really well, and my family liked them, too! Galettes are very versatile. You can add most anything as a filling. I like to have ham and cheese with a fried egg on top. My boys like scrambled eggs with cheese. Traditionally, you will find galettes served with ham and cheese, sauted spinach, mushrooms–you’re only limited by your imagination!
