Looking for a dessert that takes only a few minutes to make and is easily adaptable to a wide range of other dessert ideas? This recipe for angel food cake only takes 5 minutes to cook in the microwave! While it is a little denser than regular angel food cake, it’s perfect as a base for fresh fruit, whipping cream, or any other toppings, and it makes a great base for ‘nougat’ based candies. Best of all, it’s very simple. You will need a plastic or silicone (microwave safe) angel food pan. You can make it without, but moisture tends to collect on the bottom of the cake pan, if you don’t flip it to cool.

1 1/2 c powdered sugar (we used Better Batter corn free powdered sugar, coming soon!)
1 c (4oz or 140g) Better Batter Gluten Free Flour
1 1/2 c egg whites (either 12 egg whites or 1/2 c powdered egg whites and 1 1/2 c water_
1 1/2 tsp cream of tartar
1 c granulated sugar
2 tsp vanilla
1/4 tsp salt

Mix all ingredients together in the bowl of your electric mixer, using the whisk attachment. Turn the speed to high and beat for three to four minutes, or until batter thickens, doubles in size, and gets fluffy.

Spoon batter into a microwave safe tube pan or angel food cake mold (we recommend a silicone mold).

Cook in your microwave on High for five to seven minutes (depending on your microwave cooking time will vary) or until cake is puffy and springs back when pressed lightly.

Invert over a bottle or baker’s rack and allow to cool for twenty minutes. Use immediately or store in the fridge.
