Use this recipe to recreate delicious chow mein noodles for snacking or for your favorite dishes.
1 recipe Egg Noodles, rolled to 1/8 inch thick and cut into 1/8 inch thick ribbons and dried for at least 30 minutes, , cooked and then patted very dry.
1 tbsp sesame oil
1/4 tsp salt
2 tsp sugar
4 c oil (must be high heat appropriate! Use peanut, safflower, or sunflower), wok or deep fryer
Place cooked noodles into the sesame oil. Add the salt and sugar and stir well. Allow to marinate for an hour.
Heat oil to 350 degrees F. Place a few ounces of noodles at a time into the oil and cook for one minute. Remove from oil and repeat until all noodles are cooked.
Increase heat of oil to 425 degrees.
Working carefully repeat the frying process with the noodles, stirring constantly, until noodles turn golden brown. This usually takes less than one minute. Remove to a wire draining board or paper towel and continue to repeat until all noodles are cooked.
Break into bite size pieces. Noodles will be crunchy.
