This recipe was inspired by the super popular Peppermint Brownie offered in Christmas of 2007 at Starbucks franchises across America. Chewy brownies are shrouded in a soft peppermint buttercream and topped with semi-sweet chocolate ganache. Brownie Mix master Recipe Makes this super-easy to throw together.
Brownie Ingredients
4 cups Brownie Mix
1/2 c butter, melted
1/4 c water
2 eggs, beaten
1/4 tsp peppermint extract
Peppermint Icing
1/3 c butter, softened
1 1/2 c powdered sugar
1 tbsp milk
1/4 tsp peppermint extract
1/4 tsp vanilla extract
green food coloring, optional
Chocolate Ganache
1 c cream or whole milk
2 c semi-sweet chocolate chips
Instructions
Preheat oven to 325 degrees. Spray or grease a 9×9 inch baking pan (if you want to cut them beautifully later, line it with parchment paper, long enough to form ‘handles’ over the edges of the pan).
Mix all the brownie ingredients until just blended. Bake for 35 minutes.
Let cool completely in pan.
Prepare Peppermint Icing. Beat together icing ingredients until smooth and smooth evenly over cooled cake. Place in fridge to set.
Over a double boiler (or on low heat in the microwave) melt the chocolate in the cream or whole milk. Stir carefully until very smooth. Take off of heat and continue to stir until the mixture begins to thicken (you may want to pop it into the fridge for a minute or two every so often to speed up the process).
When the mixture is cool but still liquid enough to pour, pour over the set brownies and place back into the fridge. Cool completely. Cut into 9 brownies. If you want to cut them beautifully, remove the brownies from the pan first, using the parchment paper, and then use wire or extra fine dental floss to cut them into pieces.
Plate and serve!
