Take a grocery store short cut: pick up a trimmed and peeled container of fresh pineapple from the produce section.


Make the sauce. Combine the powdered sugar, rum, and lemon juice in a small bowl and whisk until smooth. Set aside. Prepare the pineapple and grill. Cut the pineapple lengthwise into 8-10 pieces and thread each piece onto a skewer. Sprinkle the sugar evenly over the pineapple, on all sides. Cook skewers on a preheated grill pan or over a barbecue grill at medium heat. Cook for 2-3 minutes on each side or until golden and the sugar has caramelized. Drizzle with the rum sauce. Serving notes: Serve these skewers as a dessert or a side. My family loves to eat them with Hawaiian chicken or grilled BBQ meatballs (pictured) and cilantro rice. Adapted from Donna Hay
