2 large cans of chicken Breast in water
1 carton Image no salt chicken Broth
5 c. Water
3 carrots diced
2 celery stalks diced
1/8 c. Fine diced sweet onion
3 cubes of frozen summer basil
( large bunch of summer basil blended in vitamix or blender with enough 2-3 c. water and 1 c. Olive oil, pour mixture into ice cube tray and freeze). Put into freezer bags for storage.
Juice of 1 large lemon
Make Spaetzle any basic recipe replace regular flour with BB flour. Place metal strainer or hold a plastic strainer above soup and pour Spaetzle batter into colander. Scrape into soup pot with a rubber spatula. Cook 1-2 min
Soup is done! Amazingly delicious I really love soup and I have a lemon tree so this was a way of using them up. I tried to make GF Matzo balls but they didn’t hold together so Spaetzle was my next best bet.
