Brownies are one of my favorite desserts … add ice cream, and they are even better! Brownie waffles are a fun and quick way to make this yummy dessert—without turning on the oven! The recipe I used is for a semi-sweet brownie that goes well with the sweetness of ice cream and whipped cream. Of course, you can always use Better Batter Gluten Free Brownie mix to make brownies waffles even quicker!

Brownie Waffles

Ingredients:

¾ cup (3 ounces) Better Batter Gluten Free Flour
2 tablespoons unsweetened cocoa powder
1/8 teaspoon salt
4 ounces semisweet chocolate, chopped, divided evenly (I used chocolate chips.)
3 tablespoons unsalted butter (plus any additional if needed to butter waffle iron)
½ cup sugar
2 large eggs, beaten (or substitute)
Ice cream and toppings as desired (I like vanilla ice cream and whipped cream.)

Instructions:
1. Preheat waffle iron to medium-high.
2. Whisk or sift together flour, cocoa powder, and salt in a medium-sized mixing bowl.
3. Combine 2 ounces of semisweet chocolate with butter in a medium-sized saucepan over medium heat, stirring constantly until melted and smooth.
4. Cool chocolate mixture slightly.
5. Stir in sugar and eggs.
6. Add chocolate mixture to flour mixture and stir until combined.
7. Add remaining chocolate pieces, and stir until combined.
8. Lightly brush top and bottom of waffle iron with melted butter or oil.
9. Fill waffle iron about ¾ full. Close the lid gently and cook until waffles are cooked through and slightly crispy around the edges (4 to 6 minutes, depending on your waffle iron).
10. Top each waffle with your choice of ice cream, whipped cream, and/or other toppings.
11. Enjoy your brownie waffle sundae!

Less than five minutes after taking the pretty pictures to post with the recipe, this is what the dish looked like … my kids are like piranhas!
