McDonald’s popularized this southwest, Tex-Mex breakfast meal. Warm homemade tortillas encase scrambled eggs, onions, green peppers, and Cheddar-Jack cheese. Feel free to add some salsa. These freeze and reheat well. This recipe makes 4 medium or 2 large burritos.
1/4 cup finely chopped green peppers or green chilis
1/4 cup chopped onion
1 c scrambled raw eggs (about 6)
butter
1c shredded Cheddar Jack
2 large or 4 medium Flour Tortillas
In a saute pan, melt a little butter. Saute the pepper or chilis and onion till soft. Add the eggs and scramble well. Meanwhile warm the flour tortillas in the microwave until pliable.
Place some of the egg mixture on each flour tortilla, and top with cheese. Roll up and enjoy.
