Ingredients
- 1 large or 2 small heads of cauliflower
- 1/2 c Better Batter All-Purpose Flour
- 3 large eggs, beaten
- 1 1/2 c seasoned gluten-free bread crumbs (grind up your leftover crusts and ends from your favorite Better Batter recipe!)
- 1/3 c grated Parmesan cheese
- 1/3 c finely grated cheddar cheese
- cooking spray
Instructions
Preheat and prepare the pan. Preheat oven to 425 degrees and spray a rimmed baking sheet with cooking spray.
Prep the cauliflower. Remove stem and stalk pieces from the cauliflower head with a sharp knife. Break apart florets from stem and pull the bigger florets into smaller, bite-sized pieces.
Set up an assembly line. Mix bread crumbs and both cheese in one bowl, beaten eggs in a second bowl, and in a gallon-sized zip top bag add the flour and cauliflower pieces. Gently mix to coat in flour. Use your fingers to grab a small handful of floured cauliflower and shake off excess flour. Drop into the egg and use a fork to gently toss to coat on all sides. Move the egg-coated pieces to the bread crumb mixture and press to adhere on all sides. Transfer the pieces to the prepared baking sheet. Repeat with remaining cauliflower.
Bake and enjoy. Lightly spray the breaded cauliflower with cooking spray and bake for 30 minutes, turning with a spatula halfway through the baking time. remove from oven and transfer to a platter. Serve with ranch dressing or marinara. Yum!
Partial make ahead. Prepare as directed above and place on baking sheet but store in the refrigerator for 1-2 hours before baking.
Serves 10-12 as an appetizer.
