My three little boys adore breakfast for dinner and this new-to-us recipe is a nice alternative to the usual pancakes. Made with thin slices of apples and cinnamon, these pancakes will go fast!

1 cup Better Batter Pancake & Biscuit Mix

1 cup milk

1/2 cup buttermilk

1 egg

1 tsp ground cinnamon

4-5 Granny Smith apples

Heat a griddle over medium heat. Prepare the pancake batter, mixing in the additional buttermilk and cinnamon. Peel and core the apples and slice into 1/4-inch slices (I use my mandolin slicer to get uniform slices). Gently dip and roll the apples into the pancake batter then place on a buttered griddle. Cook until golden brown, flipping once.

NOTE: The pancake batter can thicken quite a bit if you let it sit too long due to the gluten free starches in this mix. If you are making multiple batches of these apple ring pancakes we recommend mixing additional smaller batches of batter.
